Sauvignon blanc 2010
Gooseberries, green pepper and grape fruit underlined with a crisp minerality. Full bodied for a Sauvignon blanc with gooseberries, minerality and hints of citrus on the finish. A crisp, lively acidity lends balance and finesse to the wine.
Vineyards
The grapes originate from 6 year old vines. The vineyard is exposed to the cooling SE sea breezes from Walker Bay, and has a silica-quartz topsoil with an eroded, ferrous sandstone subsoil, which reduces water stress during the growth season. The cool climate allows for the best expression of the varietal.
Winemaking
The grapes were hand selected prior to being subjected to a gentle press. The juice was chilled and racked after two days. The juice was handled as reductively as possible. Fermentation temperature was kept at 8°C. The fermentation was completed after 24 days and the wine left on the lees for two months before racking and bottling.
